The book, published by Montagud Editores, presents and takes an in-depth look at how this chef and his family always look to the future with pride, rebellion plus something extremely valuable: nearly 135 years of experience, real authentic Gastronomic History. These 50 Steps are a compilation of "50 significant milestones, which revolve around a raw material, a concept or a way of understanding cooking and the restaurant dining room, "says Javi Antoja de la Rosa, director of the book and managing director of Montagud Editores.

Pedro Morán, Marcos's father, and who represents the fourth generation of this venerable restaurant, works hand in hand with his son to reinvent the tradition that is encompassed within the walls of Casa Gerardo. "I think this will be important, not only for us but for Asturian cuisine, which is really going through one of the brightest moments in its history," he says.

The book enjoyed the collaboration of José Andrés. This Asturian chef, who lives in the United States, penned the epilogue of the book. The book examines the important role played by this family in Prendes, both for Spanish Gastronomy and that of the Principality of Asturias. "Knowing the place without knowing the Moráns is to do things by halves," writes the chef.
