Pedro Morán, Marcos's father, and who represents the fourth generation of this venerable restaurant, works hand in hand with his son to reinvent the tradition that is encompassed within the walls of Casa Gerardo. "I think this will be important, not only for us but for Asturian cuisine, which is really going through one of the brightest moments in its history," he says.

The book enjoyed the collaboration of José Andrés. This Asturian chef, who lives in the United States, penned the epilogue of the book. The book examines the important role played by this family in Prendes, both for Spanish Gastronomy and that of the Principality of Asturias. "Knowing the place without knowing the Moráns is to do things by halves," writes the chef.
