Mario Sandoval (Coque, two Michelin stars) Coque's third Michelin star is possibly the most anticipated in the country's gastronomic scene. Among other reasons, because Mario Sandoval and his brothers serve excellence in its purest form. Day by day, in the kitchen, he demonstrates a mastery that results from a long career and from proudly representing the third generation of one of the most respected families of hoteliers in Spain.

His track record confirms that there is a lot of talent as well as experience and family heritage. At just over 25 years old, he was named Best Chef in Spain and won the Spanish Chefs Championship. Shortly after, he was named 'chef of the future' by the International Academy of Gastronomy, and also won one of the most prestigious awards in our country: the National Gastronomy Award for Best Chef. Convinced of the determining role of the culinary in society, he has received the Madrid Community Culture Award and the Best Restaurant Entrepreneur from the Madrid Chamber of Commerce.

On the plate, he combines tradition like nobody else, with snacks that his parents already made famous; and modernity, with avant-garde techniques at the service of flavour. For this, he uses first-class products, many of them from his own farm in the mountains of Madrid. In it, in addition, he has several projects in progress for sustainability and for the recovery of agricultural species in danger of disappearing.
