Edorta Lamo, Arrea

Arrea is the new gastronomic concept that is developed in the heart of the Alavesa Mountain and that represents the return of Edorta Lamo to its raw, hard and wild roots. Roots that it takes as a reference to practice a gastronomy of its own strongly local and indigenous style that invokes local personality, culture and customs. Boxwood spoons, charcoal, game, wild herbs, orchard, truffle, honey, almost extinct indigenous fruits and etc. They are some of the tools and ingredients to revalue a culture of its own that in recent decades has been neglected, undervalued and forgotten by most, even its inhabitants. Therefore, it is a local gastronomic commitment that tries to promote, together with other agents, producers, artisans and inhabitants, a culture of its own, of the people, of the mountains and of the still virgin muga as an informative and attractive source for its knowledge and consumption.
