Javi Olleros, Culler de Pau*

O Grove is a peninsula with fantastic coves of fine white sand. Culler de Pau is located there, a restaurant separated from the sea by a valley full of cornfields and small orchards. It is also the home of the family of the cook Javier Olleros, who shares a project with his wife, Amaranta Rodríguez, and with the Japanese cook Takahide Tamaka, whom Olleros met working at Martín Berasategui. Concerned about obesity, climate change, the rush of "fast-food" ... his is a cuisine of "Km. 0", thought with an environmental sense and Atlantic vocation. Hence, it has its own garden, cared for by "Mrs. Adelina" (Padín), from which many of the herbs that round the dishes come out. The magic of work, above recipes, is shown to be in the soul.
